Tips on choosing the right steak by Michelin-starred brothers Chris & Jeff Galvin Galvin Restaurants
A great chef needs to have, among other things, creativity, passion, flair, skill and an unswerving commitment to quality. All of these qualities go into the making of our dishes and those which stand above all others have become our #Dishesofthedecade. To celebrate these and share a few of the skills which have served so well in making them, Chris and Jeff have made a series of short videos giving some top tips and to help any cook become a #KitchenInsider.

There are few food experiences where there is less room for an ingredient to hide than when cooking steak. The meat is the star but when choosing at the butcher, can you pick out star quality every time? As with everything it’s easy when you know how and in this video Chris and Jeff give you the inside track on selecting the perfect cut.

Given its simplicity, there isn't a steak #DishoftheDecade but there is a daube of venison and you can find the recipe here:

The recipe: #DishoftheDecade: Daube of Venison, quince & chestnuts
