Refurbishing The Green Man is a labour of love and we’re taking care to make sure that everything is exactly as it should be, taking the history and heritage of this great building and enhancing it to create a great British pub for the 21st century and beyond. We are around the half way point and all of the brickwork is complete, including the two grand chimneys in the dining room, both of which have also been pronounced fit to take a roaring winter fire when needed. Specialist craftsmen have been restoring the original oak beams and their work is complete too, including some very fine work on a beam which has been dated at a thousand years old – it’s quite a thrill thinking that the ceiling is being held up by a piece of wood from fifty years before the battle of Hastings!

Below the pub the cellar is quite a sight – freshly restored and currently empty it feels huge but when we get to stocking up it will contain forty barrels and casks of craft beer so the space will soon fill up. Still a few weeks away from being a complete building, we have our eyes ahead to opening with the grand communal table currently being hand-crafted in Staffordshire, our key staff are in place and chefs are finalising the menu ready for our first guests who, if they step upstairs, will get a fine panoramic view of the river Chelmer which flows through the grounds. The menu takes time and care, not only because it simply must be perfect but also we keep meeting more excellent local suppliers who we want to work with – it’s a tough job...
